There’s another colorful locale in Angeles City, where one can have a taste of authentic Mexican food and a reminiscent of the classic cantina.
Frida Taqueria y Cantina helmed by co-founder Chef Sau del Rosario and Chloe Cauguiran (the same team behind the impressive Café Fleur and 25 Seeds) fashioned the restaurant from a Mexican icon, Frida Kahlo.
Kahlo was a painter – painted many self-portraits, artist, feminist, surrealism and celebrated internationally as emblem of Mexican national and indigenous traditions.
“Everything you see here is an inspiration from Chef Sau’s travel – food and design. Frida is a cantina style, art café and a drinking place all in one. Raising the bar of Mexican food as comfort food through authentic taste in a different vibe small cozy restaurant,“ says Cauguiran.
The menu is different and a solely Mexican taste. According to Cauguiran, to achieve the best flavor Chef Sau shared recipe with Mexican-friend Chef Alam to make sure that the food is real Mexican not a Tex-Mex, meaning more condiments less cheese, more chili peppers, beans, corn, tomatoes, cocoa and other staples.
“We serve soft-shell Tacos with different toppings and we make our own tortilla. We have Elotes – sweet corn with crema, lime-chili salt and queso cotija; Tamales – chicken with sweet potato, green beans and salsa verde y roja; and all time favorites burritos and quesadilla. All ingredients that we use are imported like the sauces, dried chili and condiments. And I think we have the most refreshing twist of Margarita cocktail, “ shares Cauguiran.
Best sellers? Pollo ala Plancha is on the top list – a plate of Mexican rice with grilled boneless chicken in Frida spice and a slaw on the side. Queso Fundido is a great appetizer made with homemade chorizo, cheese and jalapenos. For cocktails, go for Lolita a refreshing mix of watermelon, tequila, lime and cilantro. Without a doubt, food that uses finer, nuance and fresh ingredients gives a special feeling of love for Frida’s fare.
Showcasing the colorful side and artistic side of Kahlo, from the interiors, to the music, to the food, Frida will make you feel like you are living it up in the streets of Mexico. This might also be the only place in the City where we wouldn’t mind sitting at the tables outside, all for the authentic street food experience.
